2010 Paternoster Premium Pinot Noir

Tasting Note
An exceptionally elegant and beautifully balanced Pinot Noir, where vibrant fruit and savoury complexity meet in equal measure. Fragrant red cherry, wild strawberry, and ripe plum unfold into layers of dried rose, mint, forest floor, subtle spice, and earthy savouriness. The palate is refined and silky, with generous fruit at its core, framed by
bright cool-climate acidity and fine, finely integrated tannins. With more than a decade of bottle age, the wine has developed a wonderful tertiary dimension, yet retains remarkable freshness and clarity of fruit. There is a distinctly Burgundian sensibility to its balance and restraint — graceful rather than powerful, complex rather than overtly concentrated.

Finish
Long and finely detailed, with lingering red fruit, dried herbs, earthy spice and a delicate mineral freshness. The finish is persistent without heaviness, leaving a beautifully poised impression of mature Pinot Noir.

Drinking / Cellaring
Drinking beautifully now, with the balance of mature fruit and savoury complexity at an especially compelling stage. Enjoy over the next 5 years with careful cellaring, although well-stored bottles should continue to evolve gracefully beyond this window.

Winemaking: Sourced from Paternoster’s cool-climate Emerald vineyard, where slow ripening, low cropping levels and careful vineyard management encourage concentration while retaining natural acidity. Pinot Noir is handled with minimal intervention, including traditional manual pigéage, gentle pressing and extended maturation in French oak.
