Tasting Note
A rich and expressive mature Pinot Noir that captures the generosity of the 2006 vintage while retaining the distinctive savoury character of Paternoster’s Emerald vineyard. The nose opens with ripe dark cherry, dried ripe plum and blackberry, layered with dried violet, warm spice and earthy forest-floor complexity. On the palate, the wine is
full-flavoured and generous, with concentrated dark fruit at its core, framed by savoury spice, subtle earthiness and mature, supple tannins. The warmth of the vintage gives the wine a distinctly Australian character — more generous and fruit-driven than a
traditionally Burgundy-like Pinot Noir — while the vineyard’s cool-climate acidity keeps the palate fresh and focused. After two decades in bottle, the primary fruit has evolved into deeper, more savoury layers, bringing impressive complexity and depth without losing its sense of place.


Finish
Long, warm and savoury, with lingering flavours of dark cherry, ripe plum, dried herbs, spice and earthy complexity. Fine-grained tannins remain present beneath the fruit, giving the wine a persistent, structured finish and a satisfying sense of maturity.


Drinking / Cellaring
Drinking beautifully now, with the richness of the vintage balanced by mature tannins and savoury complexity. Best enjoyed now and over the next 3–5 years, provided it has been carefully stored. Decant gently if necessary, allowing the wine time to open without
disturbing its delicate mature character.

Vintage Conditions: An unusually early and warm vintage in the Yarra Valley, with a warm spring followed by high summer temperatures and several days above 40°C. Harvest commenced around three weeks earlier than usual, with growers picking early to retain natural acidity while capturing ripe flavour development. The vintage produced ripe, expressive fruit with low-to-moderate yields.


Vineyard: Paternoster’s five-acre, dry-farmed vineyard in Emerald, planted at high density with strictly controlled yields of less than 1.5 tonnes per acre. The site sits within a cool-cold climate and is characterised by mild summers and lingering autumn conditions.


Winemaking: Minimal-intervention winemaking with extended warm fermentation for Pinot Noir, soft pressing and maturation in French oak.
